depends what for. for noodle soups I'm big on udon, they're nice and thick and soak up all the flavor. for pasta dishes, if I'm not allowed to use stuffed pastas (I don't think of them as noodles), I like rotini, they have so many nooks and crannies to hold onto the sauce.

I'm partial to Shells and Wheels for standard "pasta and sauce" arrangements, though rotini is also good. Of the long noodles, I'll go for fettuccine and basically none of the others (spaghetti or god forbid angel hair). Egg noodles are indispensable for some dishes.

oh god I hate angel hair. I always feel like it's gonna try to choke me. if I'm doing italian long noodles for some reason fettuccine's definitely the go-to, but I can't imagine a world where tortellini, rotini or udon isn't a better choice.

For pasta dishes, fresh homemade fettuccine is nigh-unbeatable. I'll go along with spaghetti if the sauce is right, but fettuccine's the best.

Angel hair is fine. :rimshot:

But no, seriously, as long as it's with a very light sauce and in small amounts, there's nothing wrong with angel hair. To me it's the kind of pasta you use when you're making a small side dish rather than a main course.

If we're talking noodles in general and not just pasta, though, I really love me some chow mein.
